Step 3: Select a letter in your quote with the Touch Type Tool. Now you can edit that letter – move, scale, rotate, change color, add a stroke, overlay, etc. while keeping the entire quote editable.

I love creating these fun quote graphics and one of my favorite tools to use in Adobe Illustrator is the Touch Type Tool. It allows me to edit the individual letters like rotating, making it bigger and more without having to lose the ability to edit the phrase. The text stays editable even when you make all the changes like I did.
